While most olive oil producers try to get the most oil out of the olives by picking the fruit only once they are fully ripe; Waipara Grove picks the fruit slightly early to get the most oil out of the olives while still rich in antioxidants. By using a variety of olive growers in the region Waipara Groves are able to collect hand or machine picked olives and get them to the processing plant where they are reduced into a paste and then extracted for the oil ensuring rich, textured oils that delight the senses and are high in antioxidants and flavour.
